After a master's degree in social anthropology on the culture, staging and exchanges of living corals in the context of reef aquariums in South Florida, Simon Gérard is currently carrying out a doctorate based on an ethnographic survey in the archipelago. Palau in Micronesia. Her work focuses on the multi-referentiality of food practices and the way in which these are structured by different conceptions of "eating well" linked to health, environmental and cultural issues. In particular, he explores the way in which climate change affects culinary practices, based on the observation of technical processes and interactions with living things.
